  1. Place the lime quarters in the old fashioned glass, cut side up, so the juice and oils release easily when muddled.
  2. Add the white sugar directly over the lime pieces, ensuring the sugar touches the lime flesh to help draw out the juice.
  3. Using a muddler, press and twist the lime and sugar together firmly for about 15–20 seconds, just enough to release the juice and oils without shredding the lime peel bitterly.
  4. Rotate the glass slightly as you muddle so all lime pieces are pressed evenly and the sugar starts to dissolve into the juice, forming a sweet, aromatic lime base.
  5. Fill the glass completely with crushed ice, piling it slightly above the rim to create a small dome that will slowly melt and dilute the drink.
  6. Pour 50 ml of cachaça slowly over the crushed ice, allowing it to trickle down through the gaps and mix with the muddled lime and sugar at the bottom.
  7. Insert a bar spoon into the glass and stir gently but thoroughly for 15–20 seconds, lifting some of the lime pieces from the bottom as you stir so the flavor spreads evenly throughout.
  8. Check the balance: take a small sip with a straw; if it feels too sharp, add an extra 1/2–1 tsp sugar and stir again for 5–10 seconds until dissolved.
  9. Top up with a little more crushed ice if the level has dropped, so the glass looks full and the drink stays very cold while serving.
  10. Garnish (optional): Tuck one of the muddled lime quarters or a fresh lime wheel against the side of the glass for a bright, zesty look.
